Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
For the Sauce:
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional for heat)
- ½ cup sun-dried tomatoes, chopped
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese
- 1 cup chicken broth
- 1 tablespoon cornstarch + 2 tablespoons water (optional, for thickening)
For Garnish:
- Fresh basil or parsley
- Extra Parmesan cheese
Instructions
Step 1: Season & Sear the Chicken
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Heat butter in a skillet over medium heat and sear the chicken for 2–3 minutes per side until lightly golden. (This step adds flavor but is optional!)
Step 2: Make the Sauce
- In the same pan, sauté garlic, Italian seasoning, red pepper flakes, and sun-dried tomatoes for 1 minute until fragrant.
- Stir in heavy cream, Parmesan, and chicken broth, mixing well.
- Simmer for 2 minutes, then transfer the sauce to the crock pot.
Step 3: Slow Cook
- Place the seared chicken in the slow cooker.
- Pour the creamy sauce over the chicken.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender.
- If you prefer a thicker sauce, mix cornstarch with water and stir it into the slow cooker for the last 30 minutes.
Step 4: Serve & Enjoy
- Garnish with fresh basil or parsley and extra Parmesan cheese.
- Serve over pasta, mashed potatoes, rice, or crusty bread to soak up the sauce.
