For the Black Bean Filling:

  • 1 (15 oz) can black beans, drained and rinsed
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika (adds a nice depth)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 tablespoon lime juice
  • ¼ cup salsa or diced tomatoes
  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

For the Tacos:

  • 8 small corn tortillas (flour tortillas work too!)
  • 2 tablespoons olive oil (for brushing)
  • ¼ cup chopped fresh cilantro (for garnish)

Optional Toppings:

  • Sour cream or Greek yogurt
  • Sliced avocado or guacamole
  • Pickled red onions
  • Extra salsa or hot sauce
  • Shredded lettuce or cabbage

Ingredients

Step 1: Prepare the Black Bean Filling

  1. Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. In a medium bowl, mash the black beans slightly with a fork (leave some whole for texture).
  3. Add chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper.
  4. Stir in the lime juice, salsa, and shredded cheese.
  5. Mix until everything is well combined.

Step 2: Assemble the Tacos

  1. Lay the tortillas flat on a clean surface.
  2. Spoon about 2 tablespoons of the black bean mixture onto one side of each tortilla.
  3. Fold the tortillas in half, pressing gently to seal.

Step 3: Bake for Crispy Perfection

  1. Place the folded tacos on the sheet pan, leaving space between them.
  2. Brush both sides of each taco lightly with olive oil.
  3. Bake for 8-10 minutes, then flip each taco and bake for another 5-7 minutes until crispy and golden brown.
  4. Remove from the oven and let cool slightly before serving.

Step 4: Garnish & Serve

  1. Sprinkle with fresh cilantro.
  2. Serve with your favorite toppings like sour cream, guacamole, or salsa.
  3. Enjoy immediately while warm and crispy!

Tips for the Best Black Bean Tacos

✔ Use Fresh Tortillas – Older tortillas tend to crack; warm them slightly before assembling to prevent breaking.
✔ Add More Heat – For a spicier kick, add diced jalapeños or extra hot sauce.
✔ Keep It Crispy – If making ahead, reheat in an oven or air fryer for 5 minutes at 375°F.
✔ Experiment with Fillings – Try refried beans, roasted sweet potatoes, or sautéed mushrooms for variety.
