Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups diced potatoes (Yukon or Russet)
- 1 ½ cups carrots, chopped
- 4 cups beef broth
- 1 tsp salt
- ½ tsp pepper
- ½ tsp paprika
- 1 tsp dried parsley
- 1 cup milk or half-and-half
- 1 cup shredded cheddar cheese
- ¼ cup sour cream (optional)
- 2 tbsp flour (optional)
- 1 tbsp butter or oil
Instructions
- In a large pot, brown ground beef with onion. Add garlic and cook 1 min more. Drain grease.
- Stir in potatoes, carrots, broth, salt, pepper, paprika, and parsley. Simmer 15–20 min.
- Optional: Mix flour with some milk and stir into soup to thicken.
- Stir in remaining milk, cheese, and sour cream. Simmer 5 more minutes.
- Taste and adjust seasoning. Garnish with parsley and serve warm.
Storage: Fridge: 4 days
Freezer: 2 months
Reheat: On stovetop or microwave; add splash of broth if needed
Notes: Use ground turkey for lighter version. Try bacon, corn, or roasted garlic for extra flair!
