Creamy Potato & Hamburger Soup

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups diced potatoes (Yukon or Russet)
  • 1 ½ cups carrots, chopped
  • 4 cups beef broth
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp paprika
  • 1 tsp dried parsley
  • 1 cup milk or half-and-half
  • 1 cup shredded cheddar cheese
  • ¼ cup sour cream (optional)
  • 2 tbsp flour (optional)
  • 1 tbsp butter or oil

Instructions

  1. In a large pot, brown ground beef with onion. Add garlic and cook 1 min more. Drain grease.
  2. Stir in potatoes, carrots, broth, salt, pepper, paprika, and parsley. Simmer 15–20 min.
  3. Optional: Mix flour with some milk and stir into soup to thicken.
  4. Stir in remaining milk, cheese, and sour cream. Simmer 5 more minutes.
  5. Taste and adjust seasoning. Garnish with parsley and serve warm.

Storage: Fridge: 4 days
Freezer: 2 months
Reheat: On stovetop or microwave; add splash of broth if needed

Notes: Use ground turkey for lighter version. Try bacon, corn, or roasted garlic for extra flair!
