For the Graham Cracker Crust
- 4 tbsp unsalted butter, melted
- 24 squares graham crackers (about 1 ½ cups crumbs)
- ¼ cup granulated sugar
For the Creamy Lemon Filling
- 2 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- ½ cup fresh lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
For Topping
- Powdered sugar, for dusting
Instructions
Step 1: Make the Graham Cracker Crust
- Preheat your oven to 350°F (175°C).
- Crush the graham crackers into fine crumbs using a food processor or a rolling pin.
- Mix the crumbs with melted butter and sugar until the texture resembles wet sand.
- Press the mixture into a 9×9-inch baking pan, forming an even layer.
- Bake for 8-10 minutes, then remove from the oven and let it cool slightly.
Step 2: Make the Creamy Lemon Filling
- In a bowl, whisk together egg yolks, sweetened condensed milk, lemon juice, and lemon zest.
- Mix until smooth and creamy.
- Pour the lemon filling over the pre-baked crust, spreading it evenly.
Step 3: Bake the Lemon Squares
- Return the pan to the oven and bake for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
- Remove from the oven and let it cool at room temperature for about 30 minutes.
- Transfer to the refrigerator for at least 2 hours to fully set.
Step 4: Slice & Serve
- Once chilled, dust the top with powdered sugar for a beautiful finishing touch.
- Slice into squares or bars and enjoy!
(💡 Pro Tip: Use a sharp knife dipped in warm water for clean, smooth slices.)
