CREAMY LEMON SQUARES

Instructions

Step 1: Make the Graham Cracker Crust

  1. Preheat your oven to 350°F (175°C).
  2. Crush the graham crackers into fine crumbs using a food processor or a rolling pin.
  3. Mix the crumbs with melted butter and sugar until the texture resembles wet sand.
  4. Press the mixture into a 9×9-inch baking pan, forming an even layer.
  5. Bake for 8-10 minutes, then remove from the oven and let it cool slightly.

Step 2: Make the Creamy Lemon Filling

  1. In a bowl, whisk together egg yolks, sweetened condensed milk, lemon juice, and lemon zest.
  2. Mix until smooth and creamy.
  3. Pour the lemon filling over the pre-baked crust, spreading it evenly.

Step 3: Bake the Lemon Squares

  1. Return the pan to the oven and bake for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
  2. Remove from the oven and let it cool at room temperature for about 30 minutes.
  3. Transfer to the refrigerator for at least 2 hours to fully set.
