Ingredients
- 3/4 cup finely chopped maraschino cherries, dried
- 1/2 cup unsalted butter, room temperature
- 2 cups sugar
- 3/4 cup heavy cream
- 1/2 teaspoon salt
- 1 1/2 cups white chocolate chips
- 3/4 cup + 2 tablespoons marshmallow cream
- 1 drop of pink food coloring
- 1/2 teaspoon cherry juice
Instructions
- Prepare an 8×8-inch pan by lining it with parchment paper.
- Place the diced cherries on a plate and pat dry with a paper towel to remove as much moisture as possible, reserving some juice for later use.
- In a medium-sized saucepan, combine the butter, sugar, cream, and salt.
- Cook over medium-high heat, stirring until the sugar and butter are completely melted.
- Bring the mixture to a boil and insert a candy thermometer.
- Continue to cook, stirring frequently, until the thermometer reaches 300°F.
- Remove from heat and slowly add the white chocolate chips and marshmallow cream, stirring until fully melted and combined.
- Stir in the pink food coloring and reserved cherry juice.
- Add the chopped cherries and mix well.
- Pour the fudge into the prepared pan and smooth into an even layer.
- Allow the fudge to set at room temperature for 3-4 hours.
- Cut into 1-inch pieces prior to serving.
