Ingredients
For the Meatloaf:
- 2 eggs
- ⅔ cup milk
- 32 Ritz crackers, crushed
- ½ cup chopped onion
- 1 lb ground beef (80/20 recommended)
- 1 lb ground pork (or use all beef if preferred)
- ½ cup shredded cheddar cheese
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the Glaze:
- ½ cup ketchup
- ¼ cup brown sugar
- 1 tsp yellow mustard
Instructions
Step 1: Prepare the Meatloaf Mixture
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together eggs and milk.
- Stir in crushed Ritz crackers, chopped onions, shredded cheddar cheese, salt, pepper, and garlic powder.
- Add the ground beef and ground pork and mix gently until just combined.
Step 2: Shape & Bake
- Transfer the mixture into the loaf pan, shaping it evenly.
- Bake uncovered for 45 minutes.
Step 3: Make the Glaze
- In a small bowl, mix together ketchup, brown sugar, and mustard.
- After 45 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top.
- Return to the oven and bake for an additional 15-20 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
Step 4: Rest & Serve
- Let the meatloaf rest for 10 minutes before slicing.
- Serve with mashed potatoes, roasted vegetables, or green beans for a classic homestyle meal.
