Ingredients
For the Biscuits:
- 1 package Cheddar Bay Biscuit Mix
- 1 tsp garlic powder
- 1 tsp Italian seasoning
For the Crab Filling:
- 1 pound lump crab meat (fully cooked)
- ¼ tsp paprika
- ½ tsp onion powder
- ½ cup + mayonnaise (add more if needed)
- 1 tbsp mustard
- ½ sleeve Ritz crackers, crushed
- 1 cup grated Parmesan cheese
For the Lemon Butter:
- 2 tbsp melted butter
- 1 tsp lemon juice
Instructions
- Prepare the Biscuit Dough:
- Follow the package instructions for the Cheddar Bay Biscuit mix. Add garlic powder and Italian seasoning to the mix. Set the dough aside.
- Preheat Oven and Prepare Pan:
- Preheat the oven to 375°F (190°C). Spray two muffin tins with nonstick spray.
- Make the Crab Filling:
- In a large bowl, combine lump crab meat, paprika, onion powder, mayonnaise, mustard, crushed Ritz crackers, and Parmesan cheese. Mix well. Adjust the mayonnaise to ensure the filling is moist but holds together.
- Assemble the Stuffed Biscuits:
- Dust your hands with flour and scoop some biscuit dough. Flatten it into a small cup shape.
- Place a scoop of crab filling into the center of the dough.
- Cover the filling with more biscuit dough, sealing the edges.
- Place the formed biscuits into the prepared muffin tins.
- Bake:
- Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
- Prepare Lemon Butter and Finish:
- While the biscuits are baking, melt the butter and mix in the lemon juice.
- Brush the baked biscuits with the lemon butter while still warm.
