- 15 regular Oreo cookies, crushed

- 6 oz semisweet chocolate chips
- ½ cup whipping cream
- Pinch of salt
Instructions
- Chocolate Chip Cookie Blondie:
- Preheat the oven to 350°F (180°C). Prepare an 8-inch springform pan with butter, parchment paper, and a dusting of flour.
- Melt butter, salt, and brown sugar; mix in egg and vanilla. Gradually add flour and chocolate chips, then spread into the prepared pan. Bake for 15 minutes and cool.
- Cookies and Cream Cheesecake:
- Mix cream cheese, cornflour, sugar, salt, cream, blue coloring, and vanilla until smooth. Add eggs one at a time, then fold in crushed Oreos. Pour over cooled blondie base, prepare a water bath, and bake at 300°F (150°C) for 60-70 minutes.
- Chocolate Ganache and Decorating:
- Microwave chocolate chips, cream, and salt to form ganache. Cool to a spreadable consistency. Cover the cooled cheesecake with ganache and decorate with cookie pieces.
