Ingredients

  • For the Chocolate Chip Cookie Blondie:
  • 4 oz unsalted butter
  • ½ tsp salt
  • 2.6 oz brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 4.4 oz all-purpose flour
  • 4 oz semisweet mini chocolate chips
  • For the Cookies and Cream Cheesecake:
  • 16 oz cream cheese
  • 2 tsp cornflour
  • 3.5 oz granulated sugar
  • Pinch of salt
  • ½ cup whipping cream
  • Blue gel food coloring
  • 1 tsp vanilla extract
  • 3 eggs
  • 15 regular Oreo cookies, crushed
  • Additional mini chocolate chip cookies for decoration
  • For the Chocolate Ganache:
  • 6 oz semisweet chocolate chips
  • ½ cup whipping cream
  • Pinch of salt

Instructions

  1. Chocolate Chip Cookie Blondie:

  • Preheat the oven to 350°F (180°C). Prepare an 8-inch springform pan with butter, parchment paper, and a dusting of flour.
  • Melt butter, salt, and brown sugar; mix in egg and vanilla. Gradually add flour and chocolate chips, then spread into the prepared pan. Bake for 15 minutes and cool.

  1. Cookies and Cream Cheesecake:

  • Mix cream cheese, cornflour, sugar, salt, cream, blue coloring, and vanilla until smooth. Add eggs one at a time, then fold in crushed Oreos. Pour over cooled blondie base, prepare a water bath, and bake at 300°F (150°C) for 60-70 minutes.

  1. Chocolate Ganache and Decorating:

  • Microwave chocolate chips, cream, and salt to form ganache. Cool to a spreadable consistency. Cover the cooled cheesecake with ganache and decorate with cookie pieces.
