🍰 Cake Ingredients:

1 cup butter (softened)

8 oz cream cheese (softened)

2½ cups sugar

6 large eggs
-
1½ tsp coconut extract
-
1 tsp vanilla extract

3 cups all-purpose flour

½ tsp baking powder
-
½ tsp salt
-
1 cup sweetened shredded coconut
-
Optional: ¼ cup whole milk
🧁 Frosting:

4 oz cream cheese (softened)
-
2 tbsp butter
-
2 cups powdered sugar
-
1 tsp vanilla extract
-
1–2 tbsp milk or coconut milk
🌴 Topping:

½ cup sweetened coconut, toasted
Instructions

Preheat oven to 325°F. Grease and flour bundt or loaf pan.

Cream butter & cream cheese. Add sugar, beat 3–5 mins.

Add eggs one at a time. Mix in extracts.

Combine dry ingredients and add gradually.

Fold in coconut. Add milk if needed.

Pour into pan. Bake 60–75 mins until toothpick is clean.

Cool 10 mins, turn out and cool completely.

Frost with cream cheese frosting and top with toasted coconut.
