Cloud Bread

Ingredients

  • 3 extra large eggs (room temperature)
  • ¼ teaspoon cream of tartar
  • 3 tablespoons (1.5 oz) cream cheese, softened (or 3 tbsp Greek yogurt)
  • ⅛ teaspoon kosher salt

Instructions

  1. Clean 2 glass mixing bowls thoroughly—no residue or oil!
  2. Preheat oven to 300°F and line a baking sheet with parchment paper.
  3. Separate eggs. Ensure no yolk gets into the whites.
  4. Add cream of tartar to egg whites. Beat until stiff peaks form (~3 min).
  5. In a separate bowl, whisk yolks, salt, and cream cheese until smooth.
  6. Fold egg whites into yolk mixture gently, 1 cup at a time.
  7. Spoon mixture into 6 mounds on baking sheet, spaced apart.
  8. Bake 25–30 minutes, until golden brown.
  9. Cool on pan for 5–10 minutes before serving.
