Ingredients
- 3 extra large eggs (room temperature)
- ¼ teaspoon cream of tartar
- 3 tablespoons (1.5 oz) cream cheese, softened (or 3 tbsp Greek yogurt)
- ⅛ teaspoon kosher salt
Instructions
- Clean 2 glass mixing bowls thoroughly—no residue or oil!
- Preheat oven to 300°F and line a baking sheet with parchment paper.
- Separate eggs. Ensure no yolk gets into the whites.
- Add cream of tartar to egg whites. Beat until stiff peaks form (~3 min).
- In a separate bowl, whisk yolks, salt, and cream cheese until smooth.
- Fold egg whites into yolk mixture gently, 1 cup at a time.
- Spoon mixture into 6 mounds on baking sheet, spaced apart.
- Bake 25–30 minutes, until golden brown.
- Cool on pan for 5–10 minutes before serving.
