Ingredients
For Pancakes:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 tablespoon canola oil
- 1 large egg, lightly beaten
For Cinnamon Filling:
- 1/2 cup butter, melted
- 3/4 cup packed brown sugar
- 1 tablespoon ground cinnamon
For Cream Cheese Glaze:
- 4 tablespoons butter
- 2 ounces cream cheese
- 1 1/4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare Cinnamon Filling:
- In a medium bowl, combine melted butter, brown sugar, and cinnamon.
- Scoop the mixture into a small zip-top bag, then set aside.
- Prepare Pancake Batter:
- In a medium bowl, whisk together flour, baking powder, and salt.
- Add milk, oil, and lightly beaten egg. Whisk just until the batter is moistened. If using a boxed pancake mix, follow package instructions.
- Prepare Cream Cheese Glaze:
- In a microwave-safe bowl, melt the butter and cream cheese together.
- Whisk until smooth, then stir in powdered sugar and vanilla. Set aside.
- Cook the Pancakes:
- Heat a large skillet or griddle over medium-low heat and spray with non-stick cooking spray.
- Pour about 1/2 cup of pancake batter onto the skillet.
- Snip the corner of your cinnamon filling bag, and squeeze a spiral of the filling onto the top of each pancake.
- When bubbles start to appear on the surface, carefully flip the pancake and cook for another 1-2 minutes until golden.
- Serve:
- Transfer pancakes to a baking sheet and keep them warm in the oven as you prepare the rest.
- Drizzle with the warm cream cheese glaze before serving.
