Cinnamon Roll Pancakes are a magical fusion of two beloved breakfast favorites, combining the soft, fluffy texture of pancakes with the sweet, gooey filling of a classic cinnamon roll. These pancakes are perfect for family brunches, a special occasion, or whenever you’re craving something sweet to start your day.

Ingredients

For Pancakes:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 tablespoon canola oil
  • 1 large egg, lightly beaten

For Cinnamon Filling:

  • 1/2 cup butter, melted
  • 3/4 cup packed brown sugar
  • 1 tablespoon ground cinnamon

  • 4 tablespoons butter

Instructions

  1. Prepare Cinnamon Filling:

  • In a medium bowl, combine melted butter, brown sugar, and cinnamon.
  • Scoop the mixture into a small zip-top bag, then set aside.

  1. Prepare Pancake Batter:

  • In a medium bowl, whisk together flour, baking powder, and salt.
  • Add milk, oil, and lightly beaten egg. Whisk just until the batter is moistened. If using a boxed pancake mix, follow package instructions.

  1. Prepare Cream Cheese Glaze:

  • In a microwave-safe bowl, melt the butter and cream cheese together.
  • Whisk until smooth, then stir in powdered sugar and vanilla. Set aside.

  1. Cook the Pancakes:

  • Heat a large skillet or griddle over medium-low heat and spray with non-stick cooking spray.
  • Pour about 1/2 cup of pancake batter onto the skillet.
  • Snip the corner of your cinnamon filling bag, and squeeze a spiral of the filling onto the top of each pancake.
  • When bubbles start to appear on the surface, carefully flip the pancake and cook for another 1-2 minutes until golden.
