Ingredients

For the Crust:

  • 2 cups cinnamon graham crackers, finely crushed
  • ⅓ cup butter, melted
  • ¼ cup brown sugar

For the Cheesecake:

  • 2 (8 oz) packages cream cheese, at room temperature
  • ⅔ cup sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • ½ cup sour cream

For the Cinnamon Swirl:

  • 1 cup brown sugar
  • ¼ cup all-purpose flour
  • 23 tablespoons ground cinnamon
  • 6 tablespoons butter

Instructions

  1. Prepare the Oven and Pan:
Preheat your oven to 325°F (163°C). Line an 8×8-inch pan with foil, allowing the sides to overhang for easy removal. Spray the foil with cooking spray and set aside.
  2. Make the Crust:
Combine the crushed cinnamon graham crackers, melted butter, and brown sugar in a medium bowl. Stir until well moistened. Press this mixture evenly along the bottom of the prepared pan. Bake for about 10-12 minutes or until golden. Remove from the oven, keeping the oven on for the next layer.
  3. Mix the Cheesecake:
In a stand mixer, cream together the cream cheese and sugar until fluffy. Add the eggs one at a time, beating well after each addition. Incorporate the vanilla, followed by the sour cream. Set this mixture aside.
  4. Prepare the Cinnamon Swirl:
In a medium saucepan, combine the brown sugar, flour, cinnamon, and butter. Heat, stirring continuously, until the mixture is smooth. Remove from heat.
  5. Assemble the Layers:
Spread half of the cheesecake mixture over the crust. Drizzle half of the cinnamon mixture over it, and use a butter knife to swirl the two together. Repeat with the remaining cheesecake and cinnamon mixtures.
  6. Final Baking:
Bake for about 35-40 minutes or until the cheesecake is set and the center slightly jiggles. Cool completely at room temperature, then refrigerate for at least 2 hours before serving.
