- ½ cup sour cream

- ¼ cup all-purpose flour
- 2–3 tablespoons ground cinnamon
- 6 tablespoons butter
Instructions
- Prepare the Oven and Pan:
Preheat your oven to 325°F (163°C). Line an 8×8-inch pan with foil, allowing the sides to overhang for easy removal. Spray the foil with cooking spray and set aside. - Make the Crust:
Combine the crushed cinnamon graham crackers, melted butter, and brown sugar in a medium bowl. Stir until well moistened. Press this mixture evenly along the bottom of the prepared pan. Bake for about 10-12 minutes or until golden. Remove from the oven, keeping the oven on for the next layer. - Mix the Cheesecake:
In a stand mixer, cream together the cream cheese and sugar until fluffy. Add the eggs one at a time, beating well after each addition. Incorporate the vanilla, followed by the sour cream. Set this mixture aside. - Prepare the Cinnamon Swirl:
In a medium saucepan, combine the brown sugar, flour, cinnamon, and butter. Heat, stirring continuously, until the mixture is smooth. Remove from heat. - Assemble the Layers:
Spread half of the cheesecake mixture over the crust. Drizzle half of the cinnamon mixture over it, and use a butter knife to swirl the two together. Repeat with the remaining cheesecake and cinnamon mixtures. - Final Baking:
Bake for about 35-40 minutes or until the cheesecake is set and the center slightly jiggles. Cool completely at room temperature, then refrigerate for at least 2 hours before serving.
