Ingredients
- 3 cups peeled, cubed Russet potatoes, boiled until soft but not mushy
- 1 lb smoked sausage, thinly sliced
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups half & half or milk
- Salt & pepper to taste
- Β½ lb Velveeta cheese, cubed
- Β½ cup shredded sharp cheddar cheese
- ΒΌ teaspoon smoked paprika
Instructions
- SautΓ© the Sausage: In a large skillet over medium-low heat, sautΓ© the sliced smoked sausage in 1-2 tablespoons of olive oil, flipping and stirring until the sausage is nicely browned.
- Prepare the Baking Dish: Lightly spray a 9×13 inch baking dish with non-stick cooking spray. Transfer the cooked potatoes and browned sausage to the casserole dish, stirring just enough to evenly distribute.
- Make the Cheese Sauce: Increase the heat to medium and add the butter to the skillet. Once melted, whisk in the flour and cook for about a minute, whisking constantly to eliminate the floury taste. Slowly add in the half & half or milk, ΒΌ to Β½ cup at a time, whisking continuously until fully incorporated. Continue cooking until the sauce thickens.
