Instructions

1. Prepare the Crostini

  • Preheat your oven to 375°F (190°C).
  • Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil.
  • Sprinkle with salt and black pepper.
  • Bake for 8-10 minutes, flipping halfway through, until golden and crisp.

2. Make the Goat Cheese Spread

  • In a small bowl, mix goat cheese, honey, rosemary, heavy cream, salt, and pepper.
  • Stir until smooth and creamy.

3. Roast the Cherries

  • In a skillet over medium heat, add cherries, balsamic vinegar, honey, and rosemary.
  • Cook for 5-7 minutes, stirring occasionally, until the cherries are soft and slightly caramelized.
  • Let cool for a few minutes.

4. Assemble the Crostini

  • Spread a generous layer of goat cheese mixture onto each crostini.
  • Top with roasted cherries.
  • Garnish with fresh rosemary and a drizzle of honey or balsamic glaze.
