Instructions
- Preheat the Oven: Begin by preheating your oven to 350Β°F (175Β°C) to prepare for baking.
- Cook the Noodles: In a large pot of boiling, lightly salted water, cook the lasagna noodles for 8 to 10 minutes until al dente. Drain and rinse with cold water to stop the cooking process.
- Prepare the Sauce: Melt the butter in a large saucepan over medium heat. Add the chopped onion and minced garlic, cooking until tender. Whisk in the flour until the mixture is lightly browned, about 2 minutes. Gradually whisk in the chicken broth, milk, and salt, and cook for an additional minute. Stir in 2 cups of mozzarella and ΒΌ cup of Parmesan cheese until melted. Season with dried basil, oregano, and black pepper, then remove from heat.
- Combine Ingredients: In a separate bowl, mix the ricotta cheese, cubed chicken, and drained spinach until well combined.
- Assemble the Lasagna: In a greased 9×13-inch baking dish, spread a layer of the cheese sauce on the bottom. Place three lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by a layer of cheese sauce. Repeat the layers, ending with noodles topped with the remaining cheese sauce and the last ΒΌ cup of Parmesan cheese and remaining mozzarella cheese.
- Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Garnish and Serve: Let the lasagna cool for a few minutes before slicing. Garnish with chopped fresh parsley before serving.
