Ingredients
For the Shortbread Dough
- 1 cup all-purpose flour
- ½ cup unsalted butter, softened
- 1 cup grated sharp cheddar cheese
- 2 tablespoons finely chopped jalapeños
- ½ teaspoon salt
- ½ teaspoon garlic powder (optional, for extra flavor)
Optional Toppings & Additions
- Thin jalapeño slices (for garnish)
- ¼ teaspoon smoked paprika (for a smoky touch)
- 2 tablespoons grated Parmesan (for extra cheesiness)
Instructions
Step 1: Preheat & Prepare the Baking Sheet
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
Step 2: Make the Shortbread Dough
- In a mixing bowl, cream the softened butter and cheddar cheese together until smooth.
- Add flour, salt, garlic powder (if using), and finely chopped jalapeños.
- Mix until the dough forms a crumbly but cohesive dough.
(💡 Pro Tip: If the dough feels too dry, add 1 tablespoon of water or milk to help it bind!)
Step 3: Shape & Chill
- Roll the dough into a log shape (about 1½ inches in diameter).
- Wrap in plastic wrap and chill in the fridge for 30 minutes to firm up.
(💡 Shortcut: If you’re short on time, roll out the dough and cut it into squares instead!)
Step 4: Slice & Bake
- Slice the dough into ¼-inch rounds and place them on the prepared baking sheet.
- If desired, press a thin jalapeño slice onto the top of each round for decoration.
- Bake for 12-15 minutes, or until the edges turn golden brown.
Step 5: Cool & Serve
- Let the shortbread cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Serve warm or at room temperature, and enjoy!
These cheesy, spicy shortbread biscuits are perfect for snacking, entertaining, or gifting.
