Ingredients
- Shrimp: 1/2 lb, peeled and deveined
- Garlic: 2 cloves, minced
- Butter: 1/4 cup, softened
- Italian bread: 8 slices
- Mozzarella cheese: 2 cups, shredded
- Parmesan cheese: 1/4 cup, grated
- Parsley: 1 tbsp, chopped
- Olive oil: 1 tbsp
Instructions
- In a skillet, heat olive oil over medium heat. Add shrimp and garlic, sautéing until the shrimp turns pink, about 3-4 minutes. Remove from heat and set aside.
- In a bowl, mix softened butter, grated Parmesan cheese, and chopped parsley to make a garlic butter mixture.
- Spread the garlic butter mixture on one side of each slice of Italian bread.
- On the non-buttered side of a slice of bread, layer the cooked shrimp and shredded mozzarella cheese. Top with another slice of bread, buttered side facing out.
- Grill the sandwiches on a skillet or panini press over medium heat until the bread is golden brown and crispy, and the cheese has melted, about 3-5 minutes per side.
