Ingredients
For the Soup:
- 1 large head of cauliflower (cut into florets)
- 1 whole head of garlic
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 medium carrots, chopped
- 3 cups vegetable broth (or chicken broth for a richer flavor)
- 1 cup heavy cream (or half-and-half for a lighter version)
- 2 cups sharp cheddar cheese, shredded
- ½ teaspoon smoked paprika (adds depth and warmth)
- ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
- Salt and pepper, to taste
Optional Garnishes:
- Extra shredded cheddar cheese
- Fresh chopped parsley
- Crispy bacon bits (if not vegetarian)
- Toasted croutons or crushed crackers for added crunch
Instructions
Step 1: Roast the Garlic
- Preheat your oven to 400°F (200°C).
- Cut the top off the garlic head, exposing the cloves inside.
- Drizzle with 1 tablespoon of olive oil, wrap it in foil, and roast for 30–35 minutes until soft and golden brown.
- Once roasted, let it cool slightly, then squeeze the soft garlic cloves out of their skins and set aside.
Step 2: Cook the Vegetables
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add onions and carrots, sautéing until they become tender (about 5 minutes).
- Stir in cauliflower florets and cook for another 2–3 minutes.
Step 3: Simmer the Soup
- Pour in vegetable broth and bring the mixture to a boil.
- Reduce the heat and simmer for 20 minutes, until the cauliflower is soft.
- Stir in the roasted garlic, smoked paprika, thyme, salt, and pepper.
Step 4: Blend Until Smooth
- Use an immersion blender to puree the soup until smooth.
- If you prefer a chunkier texture, leave some cauliflower pieces intact.
- Alternatively, transfer the soup to a blender, blend until smooth, then return it to the pot.
Step 5: Add the Cheese & Cream
- Stir in the heavy cream and reduce the heat to low.
- Gradually add the shredded cheddar cheese, stirring until melted and fully combined.
- Taste and adjust seasoning as needed.
Step 6: Serve & Enjoy!
- Ladle the soup into bowls.
- Garnish with extra cheddar, fresh parsley, and optional crispy bacon or croutons.
- Serve hot with a side of crusty bread or a green salad.
