Ingredients

Instructions

1. Roast the Garlic

Preheat your oven to 400°F (200°C). Slice the top off a head of garlic, drizzle with olive oil, wrap it in foil, and roast for about 30–35 minutes until the cloves are golden and soft. This step is key — it brings out the rich, caramelized flavor that makes this soup so delicious.

2. Cook the Cauliflower and Onions

In a large pot, melt butter over medium heat. Sauté the diced onion until soft and translucent. Add the cauliflower florets and stir for a few minutes. Pour in the broth and bring everything to a boil. Then reduce the heat, cover, and simmer until the cauliflower is tender (about 15–20 minutes).

3. Blend It Up

Squeeze the roasted garlic cloves into the pot. Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender. Return the soup to the pot and stir in the cheese until melted. Add milk or cream if you want extra creaminess.

4. Season and Serve
