- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/2 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add the vegetable oil and eggs to the dry ingredients. Mix until the batter is well combined.
- Fold in the grated carrots and walnuts, if you’re using them.
- Pour the batter into the greased baking pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely.
- While the cake cools, prepare the cream cheese frosting. Beat the softened cream cheese and butter together until smooth.
- Gradually add the powdered sugar and vanilla extract, and continue beating until the frosting is creamy and well combined.
- Once the cake has fully cooled, spread the cream cheese frosting evenly over the top.
- Cut the cake into squares and serve!
