CARROT CAKE SQUARES WITH CREAM CHEESE FROSTING 

Moist carrot cake squares topped with a rich cream cheese frosting.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add the vegetable oil and eggs to the dry ingredients. Mix until the batter is well combined.
  4. Fold in the grated carrots and walnuts, if you’re using them.
  5. Pour the batter into the greased baking pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool completely.
  7. While the cake cools, prepare the cream cheese frosting. Beat the softened cream cheese and butter together until smooth.
  8. Gradually add the powdered sugar and vanilla extract, and continue beating until the frosting is creamy and well combined.
  9. Once the cake has fully cooled, spread the cream cheese frosting evenly over the top.
  10. Cut the cake into squares and serve!
