Ingredients

For the Caramel Coating:

  • 1 (14 oz) can sweetened condensed milk
  • ½ cup unsalted butter
  • 1 cup brown sugar (light or dark)
  • ½ cup light corn syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Rice Krispie Balls:

  • 4 cups Rice Krispies cereal
  • 1 cup mini marshmallows (or white chocolate chips for variety)
  • ½ teaspoon salt (balances the sweetness)

  • Sprinkles for a festive touch
  • Chopped nuts for extra crunch
  • Extra caramel drizzle for added decadence


Instructions

Step 1: Make the Caramel Sauce

  1. In a medium saucepan, combine sweetened condensed milk, butter, brown sugar, and corn syrup over medium heat.
  2. Stir constantly until the butter melts and the sugar dissolves.
  3. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 5 minutes, stirring frequently.
  4. Remove from heat and stir in vanilla extract and salt.
  5. Set the caramel aside to cool slightly.

Step 2: Prepare the Rice Krispie Mixture

  1. In a large mixing bowl, add the Rice Krispies cereal.
  2. Pour the warm caramel sauce over the cereal and stir until everything is evenly coated.
  3. Let the mixture sit for 2-3 minutes to cool slightly—this makes shaping easier.

Step 3: Stuff with Marshmallows & Shape the Balls

  1. Grease your hands lightly with butter or cooking spray to prevent sticking.
  2. Scoop about a tablespoon of the caramel Rice Krispie mixture into your hands.
  3. Place 2-3 mini marshmallows (or white chocolate chips) in the center.
  4. Roll into a smooth ball, ensuring the marshmallows are enclosed inside.
  5. Repeat until all the mixture is used.

Step 4: Let Them Set & Garnish

  1. Place the formed Rice Krispie balls onto parchment paper and let them cool for 15-20 minutes.
  2. If desired, drizzle with melted white or dark chocolate, extra caramel, or top with sprinkles or nuts.
