- 2 cups all-purpose flour

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 cup ricotta cheese
- 1/2 cup mini chocolate chips
- 1/4 cup chopped pistachios
- Powdered sugar for dusting
Instructions
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Then, mix in the ricotta cheese.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the mini chocolate chips and chopped pistachios.
- Drop spoonfuls of dough onto the prepared baking sheets, spacing them slightly apart.
- Bake for 12-15 minutes, or until the cookies are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes, then transfer them to wire racks. Dust with powdered sugar before serving.
