Cannoli Cookies

Ingredients

  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ tsp vanilla extract
  • 1 cup ricotta cheese
  • ½ cup mini chocolate chips
  • ¼ cup chopped pistachios
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In one bowl, whisk flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then vanilla and ricotta.
  4. Slowly mix dry ingredients into wet mixture until just combined.
  5. Fold in chocolate chips and pistachios.
  6. Drop spoonfuls onto baking sheet.
  7. Bake 12–15 minutes until lightly golden.
  8. Cool on sheet, then move to wire rack. Dust with powdered sugar before serving.
