Ingredients
- 2 cups all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- ½ tsp vanilla extract
- 1 cup ricotta cheese
- ½ cup mini chocolate chips
- ¼ cup chopped pistachios
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In one bowl, whisk flour, baking powder, and salt.
- In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then vanilla and ricotta.
- Slowly mix dry ingredients into wet mixture until just combined.
- Fold in chocolate chips and pistachios.
- Drop spoonfuls onto baking sheet.
- Bake 12–15 minutes until lightly golden.
- Cool on sheet, then move to wire rack. Dust with powdered sugar before serving.
