Buckeye Brownie Bites

Welcome to a delightful treat that marries the creamy richness of peanut butter with the decadent joy of brownies in one irresistible bite! Buckeye Brownie Bites are the perfect fusion of two beloved sweets, making them an instant favorite for gatherings, holidays, or simply a special treat at home. This recipe combines the simplicity of homemade brownies with the playful twist of peanut butter balls, all topped off with a silky chocolate drizzle that brings a touch of elegance to each morsel.

Ingredients

  • ½ cup peanut butter
  • 2 tablespoons butter, softened
  • ¾ cup powdered sugar
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • 3 tablespoons butter, melted (for drizzle)
  • 3 tablespoons cocoa powder (for drizzle)
  • 1 tablespoon corn syrup or honey
  • ½ cup powdered sugar (for drizzle)
  • 12 tablespoons milk or cream

Instructions

  1. Prepare Peanut Butter Balls: In a bowl, beat together peanut butter, butter, and powdered sugar until smooth. Adjust consistency as needed. Roll the mixture into 3/4-inch balls and set aside.
  2. Brownie Bites: Preheat your oven to 350°F (175°C) and grease three mini muffin pans. In another bowl, whisk together oil, sugar, eggs, and vanilla. Gradually mix in cocoa powder, flour, salt, and baking powder. Fill muffin tins 2/3 full with the batter.
  3. Bake: Place in the oven and bake for 15-20 minutes. A toothpick should come out with a few moist crumbs when done. Press a peanut butter ball into each brownie bite immediately after removing from oven. Allow to cool in the pan before transferring to a cooling rack.
  4. Chocolate Drizzle: Combine melted butter, additional cocoa powder, corn syrup, powdered sugar, and milk in a microwave-safe bowl. Heat for 20 seconds, then stir. Drizzle over the cooled brownie bites.
