- ½ cup peanut butter
- 2 tablespoons butter, softened
- ¾ cup powdered sugar
- ½ cup vegetable oil
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- ⅓ cup cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- 3 tablespoons butter, melted (for drizzle)
- 3 tablespoons cocoa powder (for drizzle)
- 1 tablespoon corn syrup or honey
- ½ cup powdered sugar (for drizzle)
- 1–2 tablespoons milk or cream
Instructions
- Prepare Peanut Butter Balls: In a bowl, beat together peanut butter, butter, and powdered sugar until smooth. Adjust consistency as needed. Roll the mixture into 3/4-inch balls and set aside.
- Brownie Bites: Preheat your oven to 350°F (175°C) and grease three mini muffin pans. In another bowl, whisk together oil, sugar, eggs, and vanilla. Gradually mix in cocoa powder, flour, salt, and baking powder. Fill muffin tins 2/3 full with the batter.
- Bake: Place in the oven and bake for 15-20 minutes. A toothpick should come out with a few moist crumbs when done. Press a peanut butter ball into each brownie bite immediately after removing from oven. Allow to cool in the pan before transferring to a cooling rack.
- Chocolate Drizzle: Combine melted butter, additional cocoa powder, corn syrup, powdered sugar, and milk in a microwave-safe bowl. Heat for 20 seconds, then stir. Drizzle over the cooled brownie bites.
