Ingredients
Brownie Layer:
- ยฝ cup (1 stick) butter, melted
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- โ cup unsweetened cocoa powder
- ยฝ cup all-purpose flour
- ยผ tsp salt
- ยผ tsp baking powder
Cheesecake Layer:
- 16 oz cream cheese, softened
- ยฝ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- ยผ cup sour cream (for extra creaminess)
Topping:
- ยฝ cup semi-sweet chocolate chips
- ยผ cup heavy cream
- Candy pieces (Snickers, Reeseโs, Twix, or chocolate shavings)
Instructions
1. Preheat & Prep
- Preheat oven to 325ยฐF (163ยฐC).
- Grease a 9-inch springform pan or line with parchment.
2. Make Brownie Base
- In a bowl, mix melted butter and sugar until smooth.
- Beat in eggs and vanilla.
- Stir in cocoa, flour, salt, and baking powder until just combined.
- Spread into prepared pan and bake for 18โ20 minutes, until set but not overbaked.
3. Make Cheesecake Filling
- Beat cream cheese and sugar until creamy.
- Add eggs one at a time.
- Mix in vanilla and sour cream until smooth.
- Pour gently over cooled brownie layer.
4. Bake Cheesecake
- Bake at 325ยฐF for 35โ40 minutes, or until edges are set and center slightly jiggles.
- Turn off oven, crack door, and let cool 1 hour.
- Refrigerate at least 4 hours or overnight.
5. Ganache Topping
- Heat heavy cream until hot (not boiling), pour over chocolate chips.
- Let sit 1 min, stir smooth.
- Drizzle over chilled cheesecake.
6. Top It Off
- Add chopped candy bars or chocolate curls.
