Ingredients
Brownie Layer:
½ cup (1 stick) butter, melted
1 cup sugar
2 eggs
1 tsp vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ tsp salt
¼ tsp baking powder
Cheesecake Layer:
16 oz cream cheese, softened
½ cup sugar
2 large eggs
1 tsp vanilla extract
¼ cup sour cream (for extra creaminess)
Topping:
½ cup semi-sweet chocolate chips
¼ cup heavy cream
Candy pieces (Snickers, Reese’s, Twix, or chocolate shavings)
Instructions
1. Preheat & Prep
Preheat oven to 325°F (163°C).
Grease a 9-inch springform pan or line with parchment.
2. Make Brownie Base
In a bowl, mix melted butter and sugar until smooth.
Beat in eggs and vanilla.
Stir in cocoa, flour, salt, and baking powder until just combined.
Spread into prepared pan and bake for 18–20 minutes, until set but not overbaked.
3. Make Cheesecake Filling
Beat cream cheese and sugar until creamy.
Add eggs one at a time.
Mix in vanilla and sour cream until smooth.
Pour gently over cooled brownie layer.
4. Bake Cheesecake
Bake at 325°F for 35–40 minutes, or until edges are set and center slightly jiggles.
Turn off oven, crack door, and let cool 1 hour.
Refrigerate at least 4 hours or overnight.
5. Ganache Topping
Heat heavy cream until hot (not boiling), pour over chocolate chips.
