Ingredients
- 1 ½ lbs baby potatoes, halved
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp dried oregano
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions
Step 1: Preheat the Oven
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it with olive oil.
Step 2: Brown the Butter
- In a small saucepan, melt butter over medium heat.
- Cook, stirring constantly, until the butter turns golden brown and smells nutty (about 3-4 minutes).
- Remove from heat and let cool slightly.
Step 3: Season the Potatoes
- In a large bowl, toss halved baby potatoes with olive oil, salt, black pepper, garlic powder, paprika, and oregano.
- Pour the browned butter over the potatoes and mix well to coat.
Step 4: Roast the Potatoes
- Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
- Roast for 25-30 minutes, flipping halfway, until they are crispy and golden brown.
Step 5: Add the Parmesan & Serve
- Sprinkle grated Parmesan over the hot potatoes and toss gently.
- Garnish with fresh parsley for a pop of color.
- Serve immediately and enjoy these crispy, buttery, cheesy potatoes!
