Ingredients

  • 2 cups broccoli, finely chopped (steamed or blanched)
  • 1 cup cheddar cheese, shredded
  • ½ cup Parmesan cheese, grated
  • ½ cup breadcrumbs (panko or regular)
  • 2 large eggs
  • ½ small onion, finely diced
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp all-purpose flour (or almond flour for gluten-free)
  • 2 tbsp olive oil or butter (for frying)

Instructions

Step 1: Prep the Broccoli

  1. Steam or blanch broccoli florets for 2-3 minutes until tender but not mushy.
  2. Drain well, then finely chop into small pieces.

Step 2: Make the Patty Mixture

  1. In a large bowl, combine:

    • Chopped broccoli
    • Cheddar & Parmesan cheese
    • Breadcrumbs
    • Eggs
    • Onion, garlic powder, paprika, salt, and pepper

  2. Mix well, then add flour to help bind the patties together.

Step 3: Shape the Patties

  1. Scoop about 2 tbsp of the mixture and shape into a small patty.
  2. Repeat with the remaining mixture, making sure they are evenly sized.

Step 4: Pan-Fry the Patties

  1. Heat olive oil or butter in a non-stick pan over medium heat.
  2. Add the patties in a single layer, making sure not to overcrowd the pan.
  3. Cook for 3-4 minutes per side, or until golden brown and crispy.
  4. Remove and place on a paper towel-lined plate to drain excess oil.

Step 5: Serve & Enjoy!

  1. Serve warm with your favorite dipping sauce (ranch, sour cream, or garlic aioli).
