Ingredients
- 2 cups broccoli, finely chopped (steamed or blanched)
- 1 cup cheddar cheese, shredded
- ½ cup Parmesan cheese, grated
- ½ cup breadcrumbs (panko or regular)
- 2 large eggs
- ½ small onion, finely diced
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp all-purpose flour (or almond flour for gluten-free)
- 2 tbsp olive oil or butter (for frying)
Instructions
Step 1: Prep the Broccoli
- Steam or blanch broccoli florets for 2-3 minutes until tender but not mushy.
- Drain well, then finely chop into small pieces.
Step 2: Make the Patty Mixture
- In a large bowl, combine:
- Chopped broccoli
- Cheddar & Parmesan cheese
- Breadcrumbs
- Eggs
- Onion, garlic powder, paprika, salt, and pepper
- Mix well, then add flour to help bind the patties together.
Step 3: Shape the Patties
- Scoop about 2 tbsp of the mixture and shape into a small patty.
- Repeat with the remaining mixture, making sure they are evenly sized.
Step 4: Pan-Fry the Patties
- Heat olive oil or butter in a non-stick pan over medium heat.
- Add the patties in a single layer, making sure not to overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and crispy.
- Remove and place on a paper towel-lined plate to drain excess oil.
Step 5: Serve & Enjoy!
- Serve warm with your favorite dipping sauce (ranch, sour cream, or garlic aioli).
- Enjoy as a snack, appetizer, or side dish!
