Instructions
- Prepare the Chicken: Chop the chicken breasts into bite-sized pieces and pat them dry with a paper towel. Toss the chicken in a large bowl with 1 tablespoon of cornstarch.
- Cook the Chicken: In a large skillet over medium heat, add sesame oil. Add the chicken and cook until no longer pink. Drain all juices from the pan. Return the skillet to the stove and continue cooking the chicken over medium heat until it is browned, ensuring to crisp up the bottom of the skillet.
- Make the Sauce: In a medium bowl, combine pepper, onion powder, apple juice (or bourbon), ketchup, soy sauce, water, brown sugar, ground ginger, minced garlic, and 1 teaspoon cornstarch. Whisk together until smooth.
- Combine and Simmer: Once the chicken is browned, add the sauce mixture to the skillet. Using a spoon, deglaze the bottom of the pan, scraping up all the flavorful browned bits. Bring the sauce to a boil.
- Thicken the Sauce: Once boiling, reduce the heat to low and allow it to simmer for 5-7 minutes, stirring often. After simmering, remove the skillet from the heat and let it sit for 5 minutes to thicken.
- Serve: Serve the bourbon chicken over white rice and garnish with sliced green onions for a festive touch.
