Ingredients
- 3 cups blackberries, divided
- ⅓ cup sugar
- 3 teaspoons lemon juice
- 7 tablespoons water, divided
- 2 tablespoons cornstarch
- 1 ready-made pie crust (such as Pillsbury)
- 1 large egg, whisked
- 1 tablespoon water
Instructions
- Prepare for Baking:
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Make the Blackberry Filling:
- In a saucepan over low/medium heat, combine 2 cups of blackberries, sugar, lemon juice, and 3 tablespoons water. Bring to a boil and let simmer for 3-4 minutes.
- Add the remaining blackberries and the cornstarch slurry (4 tablespoons water mixed with cornstarch). Continue cooking until the sauce thickens.
- Remove from heat and allow to cool for 15 minutes.
- Assemble the Hand Pies:
- Unroll the pie crust on a lightly floured surface and cut into 3-inch circles using a biscuit cutter.
- Moisten the edges of the dough with water, add a heaping tablespoon of blackberry sauce to the center, fold in half, and crimp the edges with a fork.
- Place the hand pies on the prepared baking sheet.
- Bake:
- Brush the tops with the egg wash and bake for 15-18 minutes or until golden brown.
