Blackberry Dumplings

Ingredients

  • For the Blackberry Mixture:
  • 1 quart fresh or frozen blackberries, rinsed
  • 1 cup water
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon extract
  • For the Dumplings:
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2/3 cup milk

Instructions

  1. In a large, wide saucepan, mix the blackberries, water, 1 cup sugar, 1/4 teaspoon salt, and lemon extract. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
  2. For the dumplings, combine the flour, 1 tablespoon sugar, baking powder, 1/4 teaspoon salt, nutmeg, and milk in a mixing bowl. Stir until mixed but do not overmix.
  3. Drop the dumpling batter by tablespoonfuls into the simmering berry mixture. Cover the saucepan tightly and simmer for 15 minutes without lifting the lid.
  4. Serve hot, topped with vanilla ice cream or fresh whipped cream.
