- 3 tbsp peanut oil

- 300 g (10.6 oz) beef (chuck, flank, ribeye, or sirloin steak)
- 1/4 tsp salt
- 1/8 tsp baking soda
- 2 tbsp chicken or vegetable broth
- 1/2 tbsp soy sauce
- 1/2 tbsp cornstarch
- Black pepper to taste
- Vegetables:
- 1 medium onion, thinly sliced
- 3 scallions, cut into 2-inch pieces
Instructions
Slice and Marinate the Beef:
- Thinly slice the beef into 1/8-inch thick pieces.
- In a bowl, mix the beef with salt, baking soda, chicken or vegetable broth, soy sauce, cornstarch, and black pepper. Let it marinate for 20 minutes.
Cook the Noodles:
- Boil the fresh egg noodles for 2-3 minutes or according to the package instructions. Drain and set aside.
Prepare the Wok:
- Heat a wok on high until itβs smoking hot.
- Add peanut oil generously and let it smoke before adding the marinated beef.
- Stir-fry the beef quickly until halfway cooked.
Cook the Beef and Onions:
- Add the sliced onions to the wok and stir-fry for 15 seconds with the beef.
Add Noodles and Scallions:
- Add the drained noodles and scallions to the wok. Turn off the heat for a true Chow Mein texture.
Season the Chow Mein:
- Pour in soy sauce, oyster sauce, and dark soy sauce. Mix thoroughly until the noodles and beef are well coated with the sauce.
Adjust Flavor and Serve:
- Taste and adjust the seasoning as needed.
