Ingredients

1 (9-inch) pie crust

1 tbsp butter

1 small onion, finely chopped

2 cups fresh spinach (or 1 cup frozen, drained)

4 large eggs

1 cup half-and-half (or milk + cream)

1 cup shredded Swiss cheese (or Gruyère/Cheddar)

Salt and pepper, to taste

Optional: Pinch of nutmeg
Instructions

Preheat oven to 375°F (190°C). Blind-bake crust for 8–10 minutes.

Sauté onion and spinach in butter until soft; drain well.

Whisk eggs, half-and-half, salt, pepper, and nutmeg in a bowl.

Layer cheese, spinach mixture, and egg mixture in crust.

Top with remaining cheese and bake 35–40 minutes until golden and set.

Cool 10 minutes before slicing. Serve warm or chilled.
