Ingredients

 

  • 1 (9-inch) pie crust

  • 1 tbsp butter

  • 1 small onion, finely chopped

  • 2 cups fresh spinach (or 1 cup frozen, drained)

  • 4 large eggs

  • 1 cup half-and-half (or milk + cream)

  • 1 cup shredded Swiss cheese (or Gruyère/Cheddar)

  • Salt and pepper, to taste

  • Optional: Pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C). Blind-bake crust for 8–10 minutes.

  2. Sauté onion and spinach in butter until soft; drain well.

  3. Whisk eggs, half-and-half, salt, pepper, and nutmeg in a bowl.

  4. Layer cheese, spinach mixture, and egg mixture in crust.

  5. Top with remaining cheese and bake 35–40 minutes until golden and set.

  6. Cool 10 minutes before slicing. Serve warm or chilled.
