  • 6 Medjool dates, pitted
  • ¼ cup peanut butter (or almond butter)
  • ¼ cup roasted peanuts (or any nuts of choice)
  • ½ cup dark chocolate, melted
  • A pinch of sea salt (optional, but highly recommended!)

1. Prep the Dates

  1. Slice each Medjool date lengthwise (without cutting all the way through).
  2. Remove the pit, creating a small pocket in each date.

2. Fill with Peanut Butter & Nuts

  1. Spoon a small amount of peanut butter into each date.
  2. Press roasted peanuts into the peanut butter.

3. Dip in Dark Chocolate

  1. Melt the dark chocolate in a microwave or over a double boiler.
  2. Using a fork, dip each stuffed date into the melted chocolate, coating it completely.
  3. Place on a parchment-lined tray.

4. Sprinkle with Sea Salt & Set

  1. Before the chocolate hardens, sprinkle a pinch of sea salt on top for extra flavor.
  2. Refrigerate for 10-15 minutes until the chocolate is firm.
