🏆 Victory’s Taco Tater Tot Casserole – A Crowd-Pleasing, Cheesy Tex-Mex Classic

Ingredients

VICTORY’S TACO TATER TOT CASSEROLE

  • 2 lbs lean ground beef

  • 1 (1 1/4 ounce) package taco seasoning

  • 1 (15 ounce) can corn, drained

  • 1 (10 3/4 ounce) can Fiesta nacho cheese soup

  • 1 (32 ounce) package tater tots

  • 1 (8 ounce) package cheddar cheese

Instructions

Step 1: Brown the Beef

In a large skillet over medium heat, brown 2 lbs of lean ground beef, breaking it up as it cooks. Once fully browned, drain the excess grease.


Step 2: Season It

Add the taco seasoning packet to the beef along with water, as directed on the package (usually about 2/3 to 3/4 cup). Stir and simmer the mixture for 5 minutes, letting the beef soak in that spicy, bold taco flavor.


Step 3: Mix in the Good Stuff

Stir in:

  • 1 can of corn (drained)

  • 1 can of Fiesta nacho cheese soup

Mix everything together in the skillet until well combined and evenly heated.


Step 4: Assemble the Casserole

Transfer the taco beef mixture to a 9×13-inch baking dish. Spread it out in an even layer.

Then, top the beef mixture with frozen tater tots, lining them up or spreading them loosely across the top.

Step 5: Bake It Up

Bake the casserole at 350°F for 35 minutes, until the tater tots are golden brown and the filling is bubbling.


Step 6: Cheese on Top

Remove the casserole from the oven. Sprinkle 1 (8-ounce) package of shredded cheddar cheese over the top.

Return the dish to the oven for another 5 minutes, or until the cheese is melted and gooey.


Step 7: Serve and Enjoy

Scoop onto plates and top with ketchup or taco sauce for added zing. This casserole is perfect as-is, or dress it up with your favorite Tex-Mex toppings.
