- Β½ tsp vanilla extract
- Β½ cup no-sugar-added applesauce
- 1 Β½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
Glaze:
- 2 cups powdered sugar
- β cup plus 2 TBSP apple cider or apple juice

- Prepare the Fritters:
Preheat your oven to 400Β°F (200Β°C) and spray a baking sheet with nonstick spray. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. - Mix the Batter:
In a large bowl, whisk the melted butter and sugar until combined. Add the egg, then stir in vanilla and applesauce. Gradually incorporate the flour mixture, mixing until well combined, then fold in the diced apples. - Bake:
Scoop 1 TBSP of batter onto the prepared baking sheet, spacing mounds a few inches apart. Bake for 10 minutes, then remove from the oven. Turn the broiler on high. - Glaze the Fritters:
In a small bowl, whisk all glaze ingredients until thin and smooth. Brush the fritters with glaze, letting it drip down the sides. Return to the oven and broil for 2-4 minutes, rotating the sheet every minute to evenly caramelize the tops. Watch closely to avoid burning. - Finish with Glaze:
Once out of the oven, brush the remaining glaze over the fritters. Allow them to set on the baking sheet for 15 minutes or until the glaze hardens.
