Chicken:

  • 1 tbsp vegetable oil (for cooking)

Honey Soy Marinade Sauce:

  • Β½ cup soy sauce
  • β…” cup honey (or maple syrup)
  • β…“ cup cider vinegar (or rice vinegar)
  • ΒΌ cup chicken broth
  • 1 tbsp toasted sesame oil
  • 1Β½ tbsp garlic, finely minced

Serving Sauce:

  • β…“ cup water
  • 1Β½ tsp cornflour/cornstarch

Optional Garnishes:

  • Finely sliced green onions
  • Sesame seeds

Instructions

  • Prepare the Marinade:
    In a jug, mix all marinade ingredients until the honey is fully dissolved. Reserve ΒΌ cup for basting and β…” cup for the serving sauce, then refrigerate.
  • Marinate the Chicken:
    Place the chicken in a container, pour the remaining marinade over it, and coat well. Cover and refrigerate for at least 3 hours or up to 48 hours for maximum flavor.
  • Prepare the Serving Sauce (Makes 1 cup):
    Add the reserved sauce to a small saucepan. Mix the cornflour and water separately, then add to the saucepan. Simmer over medium heat for 5 minutes, stirring until it thickens to a syrupy consistency. Keep warm; if it thickens too much, add a bit more water.
  • Cook the Chicken:
    Preheat a BBQ plate, grill, or large skillet with oil to medium-high heat.

    • For Thighs: Cook the first side for 2 minutes, then flip and baste with reserved sauce. Continue flipping and basting every minute for a total cook time of about 10 minutes, or until the internal temperature reaches 75Β°C (165Β°F).
    • For Breasts: Cook the first side for 2 minutes, flip, and baste. Flip and baste every 45 seconds for a total cook time of 8 minutes, aiming for an internal temperature of 66Β°C (151Β°F).
  • Rest the Chicken:
    Transfer the cooked chicken to a serving plate, cover loosely with foil, and let rest for 5 minutes to keep it juicy.
