Ingredients

1 lb ground beef

1 small onion, diced

2 medium carrots, shredded

3 celery stalks, chopped

3 cups diced potatoes

3 cups chicken broth

2 tbsp butter (for vegetables)

2 tbsp butter (for roux)

1/4 cup all-purpose flour

2 cups milk

2 cups shredded cheddar cheese

1/2 tsp salt

1/2 tsp black pepper

1 tsp dried parsley

1/4 tsp paprika

1/4 tsp garlic powder

Diced red bell peppers, green onions, or parsley for garnish
Instructions

Brown beef in a large pot. Drain and set aside.

In the same pot, sauté onion, carrots, and celery in butter until soft.

Add potatoes and broth; simmer 10–12 minutes until tender.

In a small pan, make a roux with butter and flour. Gradually whisk in milk until thickened.

Add the roux to the soup along with beef, cheese, and seasonings. Stir until creamy.

Garnish with festive red and green toppings and serve hot.
