Ingredients
- 2 pounds ground beef
- ¾ cup fresh bread crumbs
- ½ cup minced onion
- 2 large eggs, beaten
- 1½ teaspoons salt
- 1½ teaspoons ground black pepper
- 3 cups shredded cheddar cheese
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Meat Mixture: In a large bowl, combine the ground beef, bread crumbs, minced onion, beaten eggs, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Form the Meatloaf: Place a large piece of wax paper on a flat surface and pat out the meat mixture into a rectangle, about 14×18 inches.
- Add the Cheese: Spread the shredded cheddar cheese evenly over the meat, leaving a ¾-inch border around the edges.
- Roll the Meatloaf: Starting from one long side, roll up the meatloaf jelly-roll style, enclosing the cheese filling. Press the ends of the meat to seal in the cheese and ensure the filling doesn’t escape.
- Place in Baking Dish: Transfer the rolled meatloaf to a 10×15-inch baking dish, seam side down.
- Bake: Bake in the preheated oven for about 1 hour, or until the meatloaf is cooked through. Use an instant-read thermometer to check that the internal temperature reaches at least 160°F (70°C).
- Serve: Let the meatloaf rest for a few minutes before slicing. Serve warm, drizzled with ketchup or barbecue sauce if desired.
Notes
- Add Veggies: Mix in finely chopped bell peppers or mushrooms to the meat mixture for added flavor and nutrition.
- Spicy Kick: Incorporate diced jalapeños or hot sauce for a spicy twist.
- Leftover Idea: Use leftovers in sandwiches or as a topping for a baked potato for a quick and tasty meal.
