🍏 Apple Pie Enchiladas: An Easy Dessert That’s Out of This World Good!

There’s something magical about the transformation that occurs during baking. The resting period before baking is key — it allows the buttery caramel sauce to soak into the tortillas, softening them and giving them a pastry-like texture. The edges crisp slightly in the oven while the centers stay soft and gooey. The cinnamon enhances the apple flavor, and that silky sauce wraps everything in warmth.

Ingredients

  • 1 (21 ounce) can apple pie filling
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 6 (8-inch) flour tortillas (store-bought is perfect; just make sure they are flour tortillas)

Instructions

1. Assemble the Enchiladas

Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla.
Sprinkle with cinnamon, then roll up, tucking in the edges.
Place seam-side down in a prepared baking dish.

2. Make the Sauce

In a medium saucepan over medium heat, combine:

  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Bring to a boil, stirring constantly.
Reduce heat and simmer for 3 minutes.
Remove from heat and stir in 1 teaspoon vanilla.

3. Pour and Let Rest

Pour the sauce evenly over the enchiladas in the baking dish.
Let stand for 45 minutes.

📝 Note: Don’t rush the 45-minute resting time. This step allows the sauce to soak in and magically transform the tortillas into a soft, pastry-like crust. It’s the secret behind the melt-in-your-mouth texture!

4. Bake

Preheat your oven to 350°F (175°C).
Bake enchiladas for 30 minutes, or until golden and bubbly.

Notes

Apple Pie Enchiladas are the kind of dessert that makes people stop in their tracks. They taste like a cross between apple pie and a caramel-drenched crepe, with a gooey center, golden edges, and enough sweet flavor to make you close your eyes and smile after each bite.
