Ingredients
Cake:

2 cups all-purpose flour

2 cups sugar

2 eggs

1 teaspoon baking soda

1 teaspoon vanilla extract

Pinch of salt

1 (20 oz) can crushed pineapple (undrained, in juiceโnot syrup)

1 cup chopped nuts (optional)
Cream Cheese Frosting:

1/2 cup (1 stick) butter

1 (8 oz) package cream cheese, softened

1 teaspoon vanilla extract

1 1/2 cups confectionersโ sugar

Coconut flakes (optional, for garnish)
Instructions

Preheat oven to 350ยฐF. Grease a 9×13 inch baking dish.

Mix cake ingredients (including undrained pineapple) in one large bowl until just combined.

Pour into pan and bake for 35โ40 minutes, or until golden brown and a toothpick comes out clean.

While cake is baking, prepare frosting: beat butter, cream cheese, and vanilla until smooth. Add powdered sugar gradually and mix until fluffy.

Frost the cake while warm, then garnish with coconut or nuts if desired.
