Ingredients
For the Graham Cracker Crust:
- 2 1/4 cups (302g) graham cracker crumbs
- 10 tbsp (140g) salted butter, melted
- 3 tbsp (39g) sugar
For the Margarita Cheesecake Filling:
- 24 ounces (678g) cream cheese, room temperature
- 1 cup (207g) sugar
- 3 tbsp (24g) all-purpose flour
- 1/2 cup (115g) sour cream
- 6 tbsp (90ml) lime juice
- 2 tbsp lime zest (5β6 limes)
- 3 large eggs, room temperature
- 2 large egg yolks, room temperature
For the Whipped Cream:
- 3/4 cup plus 2 tbsp heavy whipping cream, cold
- 1/2 tbsp lime zest
- 1/2 cup (58g) powdered sugar
Instructions
1οΈβ£ Prepare the Crust:
Preheat your oven to 325Β°F (163Β°C). Line a 9-inch (23cm) spring-form pan with parchment paper in the bottom and grease the sides.
In a small bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom and up the sides of the spring-form pan.
Bake for 10 minutes, then set aside to cool.
2οΈβ£ Make the Filling & Bake:
Reduce the oven temperature to 300Β°F (148Β°C).
In a large bowl, beat the cream cheese, sugar, and flour on low speed until completely combined and smooth.
Add sour cream, lime juice, and lime zest, mixing on low until well combined.
Add eggs one at a time, followed by the egg yolks, mixing slowly after each addition.
Pour the cheesecake batter into the cooled crust.
Bake in a water bath for 1 hour 15 minutes or until the center is set.

In a mixing bowl, whip heavy cream, lime zest, and powdered sugar until stiff peaks form.
