- Β½ cup butter, softened
- 4 cups powdered sugar
- 1 dash salt
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1–2 tbsp milk, if needed
Instructions
- Make the Cookies:
Preheat oven to 350Β°F (175Β°C). In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs, lemon juice, and lemon zest until smooth. Add flour, baking powder, and salt, mixing until well combined. - Shape and Bake:
Roll dough into tablespoon-sized balls and place on lightly greased cookie sheets. Flatten each ball with a glass dipped in sugar. Bake for 9-10 minutes or until the bottoms are barely light brown. Let the cookies rest on the pan for 3-4 minutes, then transfer to cooling racks. - Prepare the Frosting:
