Ingredients
Meatballs:

1 lb ground beef

1 egg
-
¼ cup real grated cheddar cheese

2 Tbsp taco seasoning

½ tsp onion powder
-
½ tsp salt
-
¼ tsp black pepper
Sauce:
-
¼ cup enchilada sauce (3g sugar or less)

Additional shredded cheese for topping
Instructions

Preheat oven to 400°F.

In a large bowl, combine all meatball ingredients and mix until well combined.

Shape into 15 meatballs. Place on a foil-lined baking sheet.

Bake for 25 minutes or until cooked through.

Lower oven to 350°F.

Pour ¼ cup enchilada sauce into the bottom of a baking dish or cast iron skillet.

Add baked meatballs. Top with remaining sauce and shredded cheese.

Bake for 15 minutes or until cheese is melted and bubbly.

Serve hot with your favorite low-carb toppings.
