2 cups all-purpose flour

1 cup granulated sugar

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup butter, melted

1 egg

¾ cup orange juice

1 tbsp orange zest

1 ½ cups fresh or frozen cranberries
Instructions

Preheat oven to 375°F (190°C). Line or grease a muffin tin.

In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.

In another bowl, combine butter, egg, orange juice, and zest.

Stir wet into dry ingredients just until moistened.

Fold in cranberries gently.

Fill muffin cups ¾ full and bake 20–25 minutes.

Cool 5 minutes in pan, then transfer to a wire rack.
Optional Add-ons:
Sprinkle coarse sugar on top before baking or drizzle orange glaze after cooling.
