Ingredients
For the Cake:

1½ cups brown sugar

½ cup vegetable oil (or melted butter)

1 egg

1 cup buttermilk

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

½ tsp salt

2 cups diced rhubarb
For the Butter Sauce:

½ cup (1 stick) butter
-
1 cup sugar
-
½ cup heavy cream or evaporated milk

1 tsp vanilla extract
Instructions

Preheat oven to 350°F. Grease and flour a 9×13-inch baking dish.

In a large bowl, whisk together brown sugar, oil, egg, buttermilk, and vanilla.

In a separate bowl, mix flour, baking soda, and salt.

Stir dry ingredients into wet until just combined. Fold in diced rhubarb.

Pour into prepared pan and bake for 40–45 minutes, or until golden and set.

Meanwhile, in a saucepan, combine butter, sugar, and cream. Bring to a boil, then simmer 2–3 minutes. Remove from heat and stir in vanilla.

Cut warm cake into squares and serve with butter sauce.
