Ingredients
For the Peppers:

4 large poblano peppers, halved and seeds removed
For the Filling:

1 lb (450g) ground beef or turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

½ tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup diced tomatoes
-
½ cup black beans (optional)
-
½ cup corn kernels (optional)

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

2 tbsp fresh cilantro, chopped
Optional Topping:

½ cup sour cream

1 tbsp lime juice
Instructions

Preheat oven to 375°F (190°C). Prepare a baking sheet or dish.

Bake poblanos for 10 minutes to soften slightly.

Make filling: Cook ground meat until browned. Add onion, garlic, spices, and cook 1 min more. Stir in tomatoes, beans, and corn. Simmer 5 mins.

Stuff peppers: Fill each half with meat mixture. Top with cheese.

Bake again: 15–20 minutes until cheese is melted and bubbly.

Garnish & serve: Drizzle sour cream/lime, sprinkle with cilantro, and enjoy hot.
